And Then You Get To Eat Ice Cream!

Sometimes we fail, but it's the journey where we learn to succeed and then you get to eat Ice Cream!

In the interest of self-care and living life to the fullest. My business partner Alyssa and I took a break a couple of Sundays ago. We both have been dealing with autoimmune flairs and feeling pretty yucky. Humans are fascinating in the ways we cope with good and bad stress. It almost gets to the point you don't even realize that you are struggling! I once in my early twenties while working three jobs while also enjoying being in my 20's went to the Dr. complaining about back pain. What she found is that I was so stressed that my shoulders were like cement and were living up by my ears. She said to me "this is what I am going to do. I am going to write a prescription for you to go get a massage once a week." The reason she did this was so that I took it very seriously. Not only was this a profound way to make me take notice and care for myself, but in a way it was the permission I needed to not look at massage therapy as a luxury. She said "you will be very surprised once you know what your body is supposed to feel like and wonder how you were ever in the state you are in!"It is something that has taken me on the journey of loving and caring for myself and am eternally grateful for that caring Dr.




Business has been growing and with personal appointments and household responsibilities it definitely has been difficult to juggle and it is easy for work stuff to creep in to other areas of life so Alyssa and I decided to create a little space that was just about making some nourishing autoimmune friendly ice cream and watch a movie. The rules were simple no work talk, just fun! There are studies that show it is important for women to carve out girl time. It is proved that for women we need this important bonding time with friends for our hormone and mental health. Not having these connections can be as harmful as smoking!

It was even fun to plan. we spent the week sending Pinterest recipes back and forth and decided on mint chocolate chip. We figured lets not get too fancy since we haven't made ice cream together before. We divided up the ingredient list and planned to meet at Alyssa's for 10 am. Alyssa just moved into a beautiful apartment near the river and it was the perfect opportunity to see her new space and what she has done to create a beautiful inspiring space for herself. The place was amazing! She even has a tranquil window seat that is set up as a meditation area!





 It is so important to have an inspiring home and work space. Something like 20% of people are not successful due to clutter and uninspiring environments. We took a short walk in nature near the river and enjoyed the weather a little before heading inside to make magic happen in the form of healthy ice cream!



We decided that making the chocolate chips from scratch wasn't in our interest so we purchased carob chips to add to the following ingredients (in the last few minutes pour some carob chips in to the ice cream maker)
Recipe 
  • 1 (14 oz) can full fat coconut milk, 
  • 1 Teaspoon pure vanilla extract
  • 1 Teaspoon pure peppermint extract
  • 6 Tablespoons honey
  • 1 Medium Hass avocado
  • Pinch of sea salt

Blend everything but the chips in a high powered blender. Put the mixture in the refrigerator for a couple of hours or in the freezer for about 30 to 45 minutes. Then pour mixture into an ice cream maker for 15 to 20 minutes. Add carob chips when there are 5 minutes left. serve and enjoy! If you want a firmer consistency you can place in an airtight container and store in the freezer for 1-2 hours 

We ran into some challenges with our batch. I wouldn't say it was Pinterest Fail level, but it definitely wasn't ice cream texture. It was super tasty though and we laughed a lot through the process. The thing with failing is that you aren't failing if you are trying. We loved the process of bonding and learning and can't wait to try again! Here is what we learned. The grocery store didn't have ripe avocado's so we used a green one. The blender we used wasn't as high power as we needed so instead of cream the texture was more like that space ice cream that you get at events.( The one that is little tiny balls of ice) We also learned that carob chips are tasty and reminiscent of something, but we can't figure it out! The movie was hilarious as well! All in all I would say this failed attempt was a success in many ways! and in the end there is always ice cream!
